Inspired by Gulf Coast seafood shacks, these grilled oysters pack smoky heat and are perfect for summer cookouts. The spicy butter caramelizes on the shell, creating a finger-licking delight.
Ingredients:
- 12 oysters, in shell
- 1/2 stick unsalted butter, melted
- 1 tbsp hot sauce (Crystal or Tabasco preferred)
- 1 clove garlic, minced
- 1 tsp smoked paprika
- Juice of 1/2 lemon
- 2 tbsp chopped parsley
- Freshly ground black pepper
Instructions:
- Heat grill to high.
- In a bowl, combine melted butter, hot sauce, garlic, paprika, lemon juice, parsley, and pepper.
- Place oysters on the grill, flat side up. Close the lid and grill 3–5 minutes until they start to open.
- Carefully remove top shells and spoon butter mixture over each oyster.
- Return to grill (shell side down), cook for 2–3 more minutes until bubbly.
- Serve immediately, with crusty bread for sopping up the sauce.
