Inspired by Gulf Coast seafood shacks, these grilled oysters pack smoky heat and are perfect for summer cookouts. The spicy butter caramelizes on the shell, creating a finger-licking delight.

Ingredients:

  • 12 oysters, in shell
  • 1/2 stick unsalted butter, melted
  • 1 tbsp hot sauce (Crystal or Tabasco preferred)
  • 1 clove garlic, minced
  • 1 tsp smoked paprika
  • Juice of 1/2 lemon
  • 2 tbsp chopped parsley
  • Freshly ground black pepper

Instructions:

  1. Heat grill to high.
  2. In a bowl, combine melted butter, hot sauce, garlic, paprika, lemon juice, parsley, and pepper.
  3. Place oysters on the grill, flat side up. Close the lid and grill 3–5 minutes until they start to open.
  4. Carefully remove top shells and spoon butter mixture over each oyster.
  5. Return to grill (shell side down), cook for 2–3 more minutes until bubbly.
  6. Serve immediately, with crusty bread for sopping up the sauce.
